SUSTAINABLE LOCAL SOCKEYE gets the spotlight at this year’s Wild Salmon Celebration, with the help of some of B.C.’s most notable chefs.
Local culinary artists participating in the annual, outdoor, rain-or-shine event are: Julian Bond and Ocean Wise co-founder Robert Clark of Organic Ocean; Roger Ma, executive chef of Boulevard Kitchen & Oyster Bar whose accolades include a podium finish at the national 2016 Bocuse d’Or competition; former Top Chef Canada finalist Dennis Peckham, corporate chef at Glowbal Restaurant Group; Caffe La Tana’s Vish Mayekar; Squamish Nation chef Paul Natrall, founder of Mr. Bannock; Bobby Milheron, who helms Homer St. Café, Tableau Bar Bistro and Maxine’s; Como Taperia’s Jakob Kent; Lift Bakery co-founder Jane Young; and Josh Gonneau and Hamid Salimian of VCC Culinary Arts.
Throughout the evening, attendees will be able to interact with the chefs and get tips on how to prepare sea-friendly sockeye salmon at eight food stations. To go with the food are beverages from Main Street Brewing Co.; O'Rourke Peak Cellars, a new winery in Lake Country; and Kafka's Coffee. The Don Hardy Quartet will be playing live at Fisherman’s Wharf, which is just west of Granville Island.
Funds raised go toward Chefs' Table Society of B.C.’s culinary scholarships as well as the CTS Culinary Centre, the organization’s future legacy project.
