The lowdown

Like everything else 2020, COOKSCAMP was supposed to be an in-person thing. As many as 500 chefs from across Canada were to gather at North Arm Farm in Pemberton last fall to talk shop in hopes of making positive change in the culinary field. Thanks, COVID. Since that didn’t happen, the Mise-en-Place Podcast, produced by the Chefs’ Table Society of B.C., was born.

It takes a close look at the life of a professional cook, with Robert Belcham and Andre LaRiviere co-hosting “honest discussions about both the complexities and creativity of the culinary industry”. Belcham, past president of Chefs’ Table, is a luminary in the dining scene. (Formerly of French Laundry and C, he has opened several restaurants including the sadly now shuttered Campagnolo, Campagnolo ROMA, and Campagnolo Upstairs and co-founded others, such as Popina and Popina Canteen.) LaRiviere is a sustainability consultant and author.

In the first episode of the  recently launched second season, Belcham connects with industry vets from across the country, including Vancouver’s Margot Baloro, general manager of Forage. The topic? The service-included/no tipping model.

The third and newest location of Autostrada Osteria is at Vancouver House, a killer location for getting food to go and taking it to the beach or nearby park to sit underneath some cherry trees.

Co-owners Dustin Dockendorf and chef Lucais Syme (the same duo behind the defunct and greatly missed Cinara) have come up with a winning formula: simple Italian cuisine done well, with pasta made in house, in an unpretentious and relaxing space.

We’re crazy about their Anchovy on Focaccia, the bread freshly made, served with pickled vegetables; polpette al sugo (meatballs with Pomodoro and pecorino); andvitello tonnato (shaved veal with tuna sauce and capers)—and those are just to start. For mains, we’re ordering Tagliatelle Bolognese, with beef, pork, and veal ragu, and the no-nonsense Bucatini Cacio e Pepe, with single origin black pepper and pecorino.

Autostrada is participating in the Feast for Mosaic Families, through which people can buy gift cards for immigrant and refugee families to experience their new home through a restaurant meal.

The pairing

If we were dining in at Autostrada, we’d order an Italian wine, because that’s all you’ll find; however, since we’re getting food to go, we’re sticking with B.C. liquid goodness in the form of Road 13’s 2018 Marsanne. It’s one of three selections in the Oliver-based winery’s Early Bird gift box, which also includes 2018 Riesling and 2018 Viognier. Just in time for spring, the producer has recently launched a bunch of bundles; this is the most affordable of the lot, at $73. (Bonus: shipping is free on orders over $60.) While any of these Early Bird bottles would go nicely with brunch items like eggs Benny, we love the Marsanne with Italian food.

Hand-harvested and fermented in French-oak barrels, the Marsanne is a medium-bodied white wine with tropical-fruit flavours and evenly balanced acidity.
